Roasted Chicken with Roasted Vegetables

Ingredients

2
Bone in Chicken Thighs
1 Teaspoon
Olive Oil
1/2 Teaspoon
Dried Thyme
1 cup
Carrots, sliced
1 cup
Zucchini, diced
1/4 teaspoon
Black Pepper

Cooking Instructions

  1. 1.

    Preheat Oven to 400 degrees Fahrenheit

    Rub Chicken thighs with Olive Oil, Thyme, Black Pepper and Salt

    Roast Chicken

    Roast Chicken for 35-40 mins, until crisp and fully cooked.

    Toss Carrots and Zucchini

    Toss Carrots and Zucchini with olive oil , then roast for 20 minutes, stirring halfway.

    Serve

    Serve roasted chicken with roasted vegetables on the side.
